The Real Ramen and Izakaya (9100)

Forget what you learned in college about ramen, the real ramen is a gourmet Japanese dish generally made from stock (chicken or pork); combined with a variety of ingredients such as kombu (kelp), katsuobshi (skipjack tuna flakes), niboshi (dried anchovies), beef bones, shiitake, and onions; and then flavored with the likes of salt, miso, or soy sauce – sometimes butter is added for robust flavor. Chef Sean will explore some of the most popular ramen in Japan, and will also introduce you to Izakaya food. Izakaya is an informal Japanese gastropub that serves food to accompany drinks.
