Selecting, Tasting, and Cooking with Gourmet Extra Virgin Olive Oils and Balsamic Vinegars (10792)

Join Oilvangelist Randall Abney to explore the world of gourmet EVOO and balsamic vinegars. Randall and his wife lived on an olive farm in Tuscany for 10 years, and it was there that he learned all about growing olives and producing Extra Virgin Olive Oil (EVOO). He earned a certificate as a Master of Food, Extra Virgin Olive Oil from Slow Food University. Randall is also a member of the Georgia Olive Growers Association and the American Olive Oil Producers Association.
In this class, he will share the history of Olive Oil; where and how it is produced; and the health. He will cover how to buy EVOO without getting “ripped off”, since over 90% of the olive oil sold in the US labeled Extra Virgin is suspect. You will learn how to read a label on the olive oil container and know what the words really mean. Learn how to store this product properly and what causes EVOO to deteriorate. Along the way, you’ll taste several olive oils to show the difference in the quality of various EVOOs that are available in your area.
Next, Randall moves on to Balsamic Vinegar. Learn the history, how and where it is produced, what grapes are used and where they must be grown. You will learn about the Consortium that controls the quantity and quality of Balsamic Vinegar and what Aceto di Balsamic di Modena really tells you about the product in the bottle. We will cover what a battery of barrels has to do with Balsamic Vinegar and why you must have a “starter”, just like sourdough bread, as well as the different woods used to age the vinegar. Then we will taste several Balsamic Vinegars from the cheap knock-offs to one of the finest Aceto Balsamico Tradizionale di Modena DOP Balsamic Vinegars, which is 15 years old.

Japanese sushi and American sushi are quite different from each other. Most Japanese sushi is comprised of fish either raw or treated. American sushi has many options, most of those being rolls. Moore Farms and Friends is a professional farmer association of small, sustainable and USDA Certified Organic producers. By partnering with some of the finest growers in our area, they ensure that their CSA (Community Supported Agriculture) members have regular access to the highest quality, freshest, most nutritious and delicious local foods available! In keeping with that philosophy, tonight Will and Laurie will create a variety of flavorful dishes. They’ll use freshly harvested Spring Vegetables from their own farm and from other area farmers. Recipes will be provided, but the ingredients won't be known until the day before class! Only the freshest produce will be used for this spring feast!
